I have started a Recipe site. Anyone feel free to add to it.

 

Here is a Sweet Potatoes pie recipe that I kind of made up.

It is simple as that is all that I know how to make. Don't worry about the getting the spices just right.

I rather have too much than not enough. I don’t worry about getting every thing measure exactly right

ROY’S   SWEET POTATOES PIE

 

2 OR 3 SWEET POTATOES

1   9” PIE CRUST

¼ TEASPOON   CINNAMON

¼ TEASPOON   ALLSPICE

¼ TEASPOON   NUTMEG

¼ TEASPOON   LEMON EXTRACT

1-TABLESPOON BUTTER

½ CUP SUGAR

1 EGG

MILK

BROWN SUGAR

 

BOIL SWEET POTATOES AND PEAL 

{RUN UNDER COLD WATER MAKE IT EASIER TO PEAL}

MASH POTATOES IT WILL MAKE ABOUT 2-1/2 CUPS

ADD SPICES AND SUGAR

ADD BUTTER TO HOT POTATOS

BEAT EGG AND ADD

BEAT EVERY THING

ADD MILK TO SOFTEN IF NEEDED

 

COOK PIE CRUST BY DIRECTION

SOME PEOPLE JUST PUT THE SWEET POTATOES IN AN UNBAKE PIE CRUST. Try it both and let me know how it turns out.

 

POUR MIX IN 9” PIE CRUST

PREHEAT OVEN TO 350

BAKE TILL DONE ABOUT 30 MIN, OR TO FIRM

SPRINKLE BROWN SUGAR ON TOP

Does anyone have a good Broccoli Cheddar soup recipe?  I love the soup at Panera Bread but would love to make it at home - so I can have MORE.

I bet all ya need is some cream of broccoli soup and some shredded cheddar...

 

don't forget you can substitute the store or less expensive brand for the name brand....

 

I alway try to look for the lower fat and sodium, but hey sometimes ya gotta do what ya gotta do!

Thought I would check into the Recipe Site to see if anyone has a good recipe for the Crock Pot?

 

Working all day dinner is always a guessing game.  I'd like to make something different that's not in a box from the freezer.

Crock-o Chili

This chili is better than the chilly weather kind,bugh

 

2 -3 cans [~15 oz each can] beans ex: kidney; pinto; black whatever (drain/rinse)

1- 1 1/2 lb chopped meat (beef; chicken; turkey; veal; pork) or no meat.

1 small onion peel and dice

1 medium red bell pepper diced or green pepper or both

1 28 oz can stewed or diced tomatoes

1 6 oz can tomato paste

black pepper; garlic powder; pinch of ginger and some cumin or curry powder if you have it; red pepper flakes if you have it; chili powder to taste.

Bay leaf (don't eat the bay leaf! take it out before you serve the chili)

 

Brown the meat and drain.

 

Put everything in the crock pot and mix.

 

Cover/cook low about 7-8 hours

or High for 3-4.

 

Too soupy?  add 1/4 cup bread crumbs or croutons or toasted bread.

Too "spicey" add a tsp of sour cream to a bowl of the chili

 

Serve with shredded cheddar cheese and jalapeno on the side.

 

It's an easy and not spicey chili unless you want it to be.

Crock-o Corned Beef/Cabbage/Potatoes)

 

4-5 lb corned beef [*note: this will probably "cook down" to half it's size]

1 onion sliced

1 bay leaf

black pepper

6 medium potatoes halved

1 medum size green cabbage ~ 2 lbs cut into 6-8 pcs.

 

put meat into crock fatty side up; and potatoes near the bottom of the pot.

add about 1 cup water

cabbage on the sides/top of meat

cover and cook on low 6-8 hours

or on high for 3-4 hours

Easy Crock-Chicken a la AnneMurry *my personal favorite

 

3-4 lbs of chicken [ex: legs; thighs; breasts; thighs]

1 cup rice

1 can cream of [your favorite] soup

1 package of onion soup mix

 

put rice on bottom of crock; add cream of soup; add chicken; mix a little bit.  sprinkle onion soup mix on top.

 

Cover and cook low for 8-10 hours or on high for 4-5 hours.

Hey Gang;

 

This is a quick and easy dish that I made up some years ago.

You can change it around. There no set rule that it has to made a certain way.

You can use any kind of meat. Beef, Pork or use Deer meat like I do.

Make some mash potatoes to put the gravy over and you got some good to eat

Bake Meat.

 

Enough meat to cover a 7 X 9 backing dish

1 can cream of Mushrooms

1 can cream of Celery

1 or 2 stark of Celery chop up fine.

1 onion chop up fine.

1 tablespoon of Parsley Flakes

½ table spoon of Old Bay

About a ½ Tea spoon of Garlic Powder

A little water to wash out the cans and to make some gravy.

About ½ a can

 

Cut the meat into bite size pieces.

I punch hole in meat with a fork and rub a little Garlic Powder & Old Bay in the meat.

Flour and brown both side slow about 15 min or so.

Put meat in baking dish with of the other ingredients.

Bake at 350 for 45 min or so covered.

I was reading the board this morning and Lin you reminded me of the recipe site that I   started awhile back on New Here. So I thought I add another one.

I fix this one for lunch yesterday.

I usually make 2 causes they freeze well.

Then all I got to do is take it out thaw and cook.

THEN A LAYER OF TOMATOES SOUP, WATER AND TOMATOES

DO THOSE TILL YOU GET TO THE TOP.

 

 THEN TOP IT ALL OFF WITH PLENTY OF CHEESE.

Sounds like you have come up with an easier type of lasagna.
 
I love your recipes.
 
I did make your sweet tater one, but, oh well, it only made it from the oven to my mouth and belly. 
 
Next time I will make just a small one (for me) and a bigger one for "them".
 
I think it's time for me to get to sleep.

Figured I would look to see if Roy ever posted for a peach crisp....

(Roy, you did start the receipe site) 

Here's a receipe for:
 
Easier than _(fill in the blank)__ pie or crisp:
 
1 refrigerated pie crust (or your own pie crust)
3/4 cups sugar
2 TBS cornstarch
1 TBS ground cinnamon
4 cups thinly sliced/peeled (apples; peaches; pears- whatever)
1 egg white lightly beaten
1 tsp sugar

preheat oven to 425 f
 
prepare crust as directed on package or to your recipe
place on a foil lined baking sheet
 
mix sugar, cornstarch, cinnamon in a bowl then add fruit and mix.

oops....
 
continued from last post....
 
place fruit into middle and spread out to about 2 inches from end.
 
Fold/pleat crust to form a boarder around the fruit.
 
Brush edge with egg white and sprinkle with a bit of sugar.
 
Bake ~ 20 min or until crust is golden.
cool slightly then serve.
 
**if using peaches, pears...
fold/pleat edge and bake crust for ~ 5 min before adding adding peach/pear mix...

Hi Roy & Lin
I knew something would get you critters out here.   
Not sure who Crock-O is but, I tried the crock pot chili recipe and it was good.  Used ground turkey.  ALERT! to everyone if you shop Kroger, which I do, please be aware of their RECALL on ground beef.  Luckily I haven't bought any in a while so I'm safe.
Love reading these great recipes.  Never know what I might try.  Anything quick and easy because I do not like to cook.  I don't know why but I wish I did because that is the only way to a man's heart.
